I collect your email address when you signup, which is stored in my database, in the database of my auth provider (Clerk) and in my email marketing platform Convertkit. For all three platforms, I'm the only one with access to that.

If you connect your Discord account after signing up for one of the plans, I do store your username and your discord ID. Your access token is never stored. It's used to fetch the details on signup, and add you to the server, after that it's immediately discarded.

I use Fathom (hosted in EU) to track page views.
